500g mashed potatoes, pressed
through a sieve
200g plain flour
1 teaspoon salt
Pinch sugar
When potatoes are cool enough to handle, mix in the flour, salt and sugar to a dough. Divide in half and roll each into a ball. Roll out to about a ½ cm thick round, trim the edges if you wish.
Filling
150g Kilmora cheese, diced
4 spring onions, finely chopped
1 tablespoon double cream
Mix together and divide between the middle of the 2 potato bread rounds.
Fold over and seal the edges. Place in a large frying pan over a medium-hot heat and cook for about 3 minutes on each side.
