Thank you to the amazing Foodmilija for this beautiful salad. It's perfect for the current heatwave, light but satisfying and a beautiful rainbow of colour.
Ingredients
Smoked Duck Breast
Lettuce
Tomatoes
Anchovy Stuffed Olives
Kalamata Olives
Spring Onions
Coriander
Walnuts
Dried Cranberries
On the Side:
Karaway Crunchy Rye Fries
For Dressing:
Garlic
Coriander
Lemon Juice
Olive oil
Spanish honey
In a small jar or sealable container mix dressing ingredients (not vital but it makes it easier to mix as you can just shake). The rough ratio is 3 parts oil to 1 part acid but adjust this to your own taste. The dressing can be made in advance and then added just before serving.
Chop or slice ingredients into bite-size pieces add dressing and mix. Finely grate cheddar and sprinkle liberally over both the salad and the Karaway Rye Fries and enjoy!
